Caprese kebabs, it's Summertime!

Winter is over, Spring flew by and Summer is here!!!

We might not have had a ton of snow last winter, but for sure it was cold and never ending. But that is all in the past and time to enjoy summer. Spending time outside, enjoying light foods, relax and just enjoy summer.

Unfortunately this year I am not growing my own garden, but luckily enough fresh produce to find around the area. I made some Caprese Kebabs, they came out so good. Mind you, I had to watch the little mozzarella balls like a hawk, to make sure they wouldn't disappear ahead of time.

This snack is easy to make and perfect when entertaining, as it is simple food on a stick.



Take a large leave of Basil and cut it in julienne strips, place a cherry tomato on the stick followed by the end of a strip of basil, followed by the mozzarella, place the top of the basil strip on top of the mozzarella (just like a little ribbon) and continue again with a cherry tomato.


When the kebabs are strung, place them on a bed of fresh basil, sprinkle some Italian seasoning, drizzle a bit of extra virgin olive oil and drizzle a little bit of white truffle glaze over it. Very easy and fast to make, and so delicious. The perfect bite for a relaxing summer afternoon.
